What you’ll need for this recipe:

  • Avocado : One ripe avocado optional, but I love avocados.
  • Cream cheese : Full fat cream cheese.
  • Bread : A piece of toast, I personally like sour dough bread but you can choose which ever you like.
  • Cheese: A few cubes of mild or sharp cheddar cheese.

  1. Crack the eggs into the bowl, add a pinch of salt and black pepper and whisk until combined.
  2. Heat a non stick pan on medium heat and add a few knobs of butter
  3. Toast the bread on both sides in the pan with the melted butter flipping as needed until toasted and remove and set aside.
  4. Place the non-stick pan back over medium heat and add a small knob of butter. Let it melt and gently coat the pan.
  5. Pour the eggs into the pan and let them set slightly. As the edges cook, gently push them toward the center with a spatula so the uncooked egg flows outward.
  6. Run the spatula around the edges to make sure the omelet isn’t sticking.
  7. Once the eggs are mostly set but still soft on top add the cheddar cheese & a generous amount of the everything bagel seasoning in the middle of the omelet.
  8. Gently fold the omelet rolling it over for another 30-60 seconds making sure is just amount melted and the eggs are cooked but not burnt.
  9. Spread the cream cheese on top of the toasted bread and I like to add a pinch of the everything bagel seasoning to the top of the cream cheese.
  10. Take you folded omelet and slide it gently onto your toasted bread with the covered cream cheese.
  11. Top with sliced avocado or mashed if you desire

Use medium heat to keep the omelette soft and fluffy, not dry.
